Vegan Golden Beets

I had the basic idea for what I wanted but needed oven recommendations which I took from HolyCowVegan, and realized how they got their name.. Holy cow, thats a lot of ads! So yes they’re vegan, but they’re good anyway! I was tempted to add farmer’s cheese just for the sake of making it not vegan anymore. I’m glad I stopped myself. I don’t think it needs it, and may make the dish taste like its trying to hard. If you add farmers cheese, or any leafy seasonings such as rosemary or summer savory, do it at the end because the oven temp is too high for it to do anything but muddy the flavor.

Ingredients
- 3 golden beets
- 2 cloves garlic, grated
- 2T (tablespoon) EV Olive Oil
- 1/3 cup cashews, coarsely chopped
- Salt and Pepper, to taste
- Farmer Cheese (optional)
Directions
- Preheat oven to 400F
- Cut beets into medallions or 1/2 inch cubes. Leave peels on, or peel if absolutely necessary.
- Toss beets and remaining non-optional ingredients in a bowl and turn out onto a parchment lined cookie sheet. Spread ingredients evenly over the cookie sheet.
- Bake for 20 minutes, stir ingredients gently, and bake for another 20 minutes.
- Garnish with herbs and/or farmers cheese if desired, and serve warm or room temp.
